Apple Pie with Cheddar Crumb Topping
1 pie pastry
5-6 c. apples, peeled and chopped (about 4 large apples)
1/2 c. brown sugar
2 T. cornstarch
1 t. cinnamon
Topping:
1 c. shredded sharp cheddar cheese
1/2 c. brown sugar
3/4 c. flour
1/2 t. cinnamon
2 T. butter, cut into pieces
Preheat oven to 375. In a large bowl, combine apples, 1/2 cup brown sugar, cornstarch, and 1 teaspoon cinnamon. Mix well and pour into pie pastry. Place pie plate on a cookie sheet to prevent dripping and bake for 30 minutes.
Meanwhile, use a food processor to combine all the topping ingredients till thoroughly mixed. This mixture will be crumbly. Smooth the crumbs over the apple mixture from the center out toward the edge of the pie. Bake an additional 15 - 20 minutes or until topping is golden brown.
