Frozen Berry Juleps

Approaching another berry season, this is a great way to use up last year's remaining frozen berries. I prefer blackberries or blueberries for this one, but have fun! Makes 4 drinks.

1 pint frozen (or fresh?) berries, thawed
1/4 c. honey or raw sugar
1/2 t. vanilla extract
1 large bunch fresh mint
1 c. bourbon
Ice
Seltzer, club soda, or Pellegrino 

Place berries in a sieve over a bowl. Press against mesh of sieve to drain juice into the bowl. Set solids aside (save them for later to stir in with yogurt or cottage cheese and a drizzle of honey). Add honey or sugar to the berry juice and stir well to make syrup. Pour 1/4 cup of bourbon into each of 4 glasses. Add muddled mint. Divide berry syrup between the glasses, add ice, and then top with seltzer. Stir a little and serve. Great for the first warm afternoons of spring...
