Spinach with Warm Raspberry & Goat Chesse Dressing

Warm raspberry & goat cheese Dressing-- Sautee 1 c. chopped sweet onions in 3 tbs olive oil, lower heat and add 3 tbs. balsamic vinegar, 1c. goat cheese, 1/4 c. water and stir until warmed. Pour over fresh spinach to wilt. Sprinkle 1/2 c. red raspberries on top. Salt & pepper to taste.
